How to make ash-roasted potatoes at home

One of the greatest advantages of ash-roasting potatoes is that it may be the simplest method for cooking them, hands down. Even better, if you're serving the potatoes as a side, you can roast them simultaneously while preparing the rest of your meal. Feel free to use any type of potato you prefer, but keep in mind that the size will affect the cooking duration. Smaller potatoes typically take about 45 minutes to roast in the ash, while larger varieties, such as Russets, may require up to twice that time.
To begin ash-roasting your potatoes, start by building a fire in your grill and allowing the coals to become red-hot. Aim for a large fire, as you'll need ample space for the potatoes. Once the coals are ready, bury the potatoes completely so that no part is visible (using long barbecue tongs can help you place them safely).
After all the potatoes are nestled in the hot coals, you can place the grate on top and grill other items while the potatoes cook. This allows you to prepare a main dish, like grilled flank steak, at the same time your side dish is roasting. To check if the potatoes are done, poke them with a skewer.
