Mustard can be stored at room temperature for two months

Acids, such as vinegar, serve as natural preservatives by creating an unfavorable environment for microbes. Vinegar contains acetic acid, which disrupts the structure of these germs by chemically altering components like fats and proteins within the bacteria. Consequently, germs and mold are unable to grow or flourish, and mustard has sufficient vinegar content to inhibit that growth. After opening a jar of mustard, it should be stored in a cool, dark location, like a kitchen cabinet, where it will remain good for approximately two months.
However, refrigeration further enhances the preservation of this condiment. The cold temperatures provide an additional barrier against bacterial growth. For this reason, opened mustard can last up to a year when refrigerated. While refrigeration isn't essential for mustard, if you can keep it cold and plan to use it slowly, the refrigerator may be the preferable choice. In contrast, dry mustard can always be stored in the pantry.
