How to cure your egg yolks

Preparing these delightful little spheres may seem daunting, but it's actually quite straightforward. All you need are salt, sugar, and egg yolks. Curing your yolks is an excellent way to utilize the leftovers from recipes like meringue, which only require egg whites. The specific ratio of salt to sugar can vary depending on the recipe, but typically you'll need several cups of each.
Start by mixing the salt and sugar together to create a consistent blend, and feel free to add your favorite seasonings, such as pepper, herbs, or grated truffle.
