How to peel garlic cloves in seconds

This method is effective for peeling whole bulbs or just a few cloves, but it's especially useful when you have a large quantity to tackle. It works best with fresh garlic, as the skins become more difficult to remove when the garlic dries out. To quickly break apart a whole bulb into individual cloves, you'll need a metal mixing bowl with a flat bottom. Place the bulb on a sturdy cutting board, and with both hands, grip the edge of the bowl as if it were a steering wheel. Position the bowl above the garlic and press down firmly with the flat bottom. Pound down two or three times, and the cloves should separate. Finish breaking them apart by hand.
Next, put the cloves (with their skins) into the bowl or a sealable quart-sized jar. If using a bowl, place another bowl upside down on top to create a sealed sphere. If using a jar, secure the lid tightly. Hold the sides of your bowl-sphere or jar and shake vigorously for 10 to 20 seconds (think of it as shaking a cocktail). That should do the trick! If the skins haven't come off completely, give it another shake. The skins should have slipped off, leaving you with clean, ready-to-use cloves (just remember to trim the hard ends). If you have any leftover cloves, no worries! Store them in a sealed container in the refrigerator and use within a week, or freeze them for up to six months. Alternatively, you can double the garlic for an extra-flavorful garlic bread.
