How to freeze steaks for the best results

Another key to achieving a crispy crust on frozen steaks is to freeze your meat properly. It's essential to freeze the steaks completely flat at first, ensuring that nothing touches them. This is important because any contact with the steak too early can draw moisture from its surface, leading to the formation of ice crystals. If there is ice on the steaks, they may splatter when placed in a hot oil-filled pan, and there's even a risk of them catching fire during cooking.
To avoid this, arrange the cuts of meat on a baking sheet lined with parchment paper and place it in the freezer. Once the steaks are fully frozen, you can wrap them in plastic wrap and store them in zip-top plastic bags in the freezer for up to three months.
However, keep in mind that freezing your steaks won't automatically improve their quality. Therefore, if you plan to cook the steaks from frozen, it's wise to start with a high-quality cut.
