Fish sticks were designed to look like chicken

Minced fish or pollock is first coated in batter or breading before being partially cooked and frozen. This process originated years ago to make fish more enticing, similar to chicken. The idea was that a chicken-tender-like appearance would encourage more people to give it a try. Nowadays, various seafood companies have their own unique recipes for the breading. For instance, Gorton's uses a combination of wheat flour, yellow corn flour, and seasonings, while Trident Seafoods opts for a mix of whole wheat flour, enriched flour, and whole grain yellow cornmeal, along with a selection of dried spices. Interestingly, Trident also incorporates ranch seasoning into its breading.
The recipe for the ideal fish stick has evolved over time. For example, Gorton's fish sticks now include added sugars, soybean oil, and extra flavorings, which were not present in earlier versions of the snack. Nevertheless, this stick-shaped treat has remained popular throughout the years.
