How to store sauerkraut

An opened jar of homemade sauerkraut can remain good for up to six months. However, if you have store-bought sauerkraut, it's best to adhere to the manufacturer's guidelines regarding its shelf life after opening. While you can keep opened sauerkraut on the counter, it won't last as long that way—typically only about a month before it starts to dry out.
To maximize the shelf life of your opened sauerkraut, store it in an airtight container in the refrigerator. When serving, always use a clean utensil to minimize the introduction of additional bacteria into the cabbage.
It's wise to start checking your sauerkraut for spoilage after approximately four months. Look for changes in smell and appearance. If the sauerkraut develops a stronger odor or a rotten smell, it is no longer safe to eat. Additionally, it should maintain its lighter color; if it has darkened, it is too old and should be discarded. Lastly, be on the lookout for any fuzz, which indicates mold.
