Making your own rainbow grilled cheese

In essence, you're preparing a classic grilled cheese sandwich. The main differences lie in the cheese's color and its stretchiness. The ideal choices are shredded or grated mozzarella or gouda. White cheese (as opposed to yellow) tends to absorb food dyes more effectively. If you opt to grate your own cheese, steer clear of aged varieties, as the higher acidity from aging breaks down the proteins, reducing the cheese's stretchiness.
To recreate the Le Shiner experience, choose a soft white bread, such as Japanese milk bread. Store-bought white bread, often considered the best for a traditional grilled cheese, also works nicely. However, feel free to get creative with thicker, hand-sliced breads, multi-grain options, or any type you prefer, as long as it toasts well and is easy to slice through when grilled.
Now for the fun part. Divide your cheese into separate bowls based on the number of colors you want to use. Generously add food coloring to about a cup of cheese in each bowl and mix until fully combined. Aim for the brightest colors possible. Butter your bread and arrange each color of cheese in a line. The key is to position the lines perpendicular to the top and bottom of the bread (from side to side), so when you cut the sandwich in half and pull it apart, you'll achieve that rainbow effect. Cook your sandwich, and slice through the bread without cutting into the cheese. Pull it apart and enjoy!
