After fermentation, the wine matures for six months in both stainless steel and oak, spending time on its lees—those dead yeast cells that may sound unappealing but add remarkable texture and flavor to the wine. While The Walls winery derives its name from the Washington State Penitentiary, affectionately referred to as "The Walls" and a prominent landmark in Walla Walla, Washington, the winery's vision embodies hope and inspiration. The team highlights on their website that we often construct walls in our lives to safeguard our hearts, uphold our values, or establish boundaries. However, wine possesses a remarkable ability to break down these barriers and unite us. It was this tribute to wine that captured my heart for this winery, along with its location in the vibrant wine region of the Pacific Northwest.

Lip Stinger is a blend inspired by the southern Rhône, consisting of 50% grenache blanc, 25% viognier, 17% roussanne, 4% marsanne, and 2% each of picpoul and clairette blanche, sourced from Yakima Valley and Walla Walla Valley. This wine is highly aromatic, featuring a smooth texture complemented by bright acidity and a delightful mix of honeyed yet tangy fruit. Priced at $32 per bottle, it makes for a delightful summer refreshment, perfectly suited for a variety of warm and cool weather dishes.

Susana Balbo Signature Brioso White Blend

Susana Balbo is truly a remarkable individual. As Argentina's first female enologist, she is celebrated as one of South America's most influential figures in the wine industry. Known as the "Queen of Torrontés," she has played a pivotal role in elevating this unique yet captivating grape to prominence in Argentine white wines. I had the wonderful opportunity to meet Susana during my stay at the enchanting SB Winemaker's House Spa & Suites, the inaugural hotel in a collection that she and her daughter, Ana Lovaglio Balbo, are developing in Mendoza. I can attest that she is a visionary both as a person and as a winemaker.

In my hotel room, I found a bottle of the Susana Balbo Signature Brioso White Blend. As any wine enthusiast would, I indulged in it while relaxing on the patio of my serene suite. Until that moment, I had considered torrontés to be one of the grape varieties I didn't particularly enjoy, but this wine completely transformed my perspective.

This exquisite white blend, crafted with nearly equal parts of sémillon and sauvignon blanc, hails from Argentina's Uco Valley. It boasts an enchanting bouquet of exotic fruits, jasmine, citrus zest, and a hint of wet stone. I was so impressed with it during my time in Argentina that I bought some to enjoy back in California, and it remains one of my favorite wines at home.
