Spicy ice cubes can deliver a surprising kick despite their small size, so Schneider suggests diluting them before freezing to prevent them from becoming too fiery. "I've created cocktails using ice made from jalapeño and habanero juices, which would be incredibly spicy if not diluted," he explains.
You can amplify the heat by pairing these ice cubes with a spicy margarita or a classic Clamato michelada, which blends Clamato, beer, lime, and hot sauce. If you add them to a typically mild drink, the ice can enhance the sweet or tangy notes in your cocktail, resulting in a more dynamic flavor experience. Just be sure to give your guests a heads-up in case they aren't prepared for the heat!
Freezing fruit juice in ice

"Shaking a cocktail with ice cubes made from frozen juice rather than water is an excellent method to infuse flavor without watering down the drink," explains Bryan Schneider. "For example, a daiquiri or margarita shaken with pineapple juice instead of traditional ice is absolutely delightful." Schneider also advises diluting the juice slightly with water to facilitate the freezing process and to prevent the fruit flavor from becoming too intense.
To enhance the experience even further, you can incorporate solid pieces of fruit into the ice cubes for added texture as the ice melts. Consider pairing orange juice ice cubes with a classic hurricane cocktail, or adding ice cubes filled with fresh fruit to your sangria.

If you're ready for a challenge, recreating Bryan Schneider's layered Pride ice is a guaranteed way to wow your guests. All you need to do is freeze various types of juices separately. It may sound tricky, but it’s not as hard as it seems; it just takes a bit of extra time. "Each layer must be completely frozen before adding the next, so it’s a time-intensive process that takes about 48 hours," Schneider explains.
Depending on how many layers you want to create, you can craft a variety of vibrant ice cubes, from simple two-tone cubes to more intricate designs like the tricolor Italian flag ice cubes served at Quality Italian, red and white stripes resembling candy canes for a festive gathering, or the particularly ambitious Pride rainbow ice cube.
Colorful ice cubes are a fantastic opportunity to showcase your creativity, but be mindful of how you mix those colors. "I generally avoid food coloring," Schneider advises. "Frozen juices are an excellent way to introduce color." Keep in mind how these added flavors will blend with your drink. For instance, a lime and cranberry ice cube could enhance a cosmopolitan. However, you might prefer simpler cocktails like a margarita that can accommodate the extra fruity notes. No matter what you choose, your guests will surely appreciate the vibrant colors and flavors swirling into their cocktails.
