Audrey Hepburn's take on an Italian classic

Audrey Hepburn (along with the rest of us) owed a debt of gratitude to the Italians for this delightful gluten-free treat. After marrying Italian psychiatrist Andrea Dotti in 1969 and relocating to Rome, she embraced her Italian identity. It’s perhaps no surprise that her favorite dessert is inspired by an Italian classic: the torta tenerina (or torta tacolenta), which is widely regarded as one of the earliest flourless chocolate cakes. Hepburn also spent considerable time in Capri during the 1950s and '60s, so the torta Caprese—a similar cake made with ground almonds and one of many Italian desserts worth trying—may have also influenced her recipe. Nevertheless, Hepburn's version incorporates more eggs than either of these traditional Italian desserts. Serve it as she would have: with a generous dollop of whipped cream for special occasions, like her son Luca's birthdays.
