Red wines: do's and don'ts

While she recommended certain wines, there were definitely options that Julia Child advised against for her Coq au Vin recipe. Her original notes indicated that bold, heavily oaked red wines were inappropriate, and she also pointed out that varietals like Cabernet would not be a good fit.
Her initial recipe called for just 2 cups of red wine, but more contemporary adaptations have increased this to 3 cups. Regardless of whether you choose the original or the modern version, both require a young, full-bodied red wine.
